Welcome Chef Roy Park: LILYMU’s New Head Chef Brings a Bold, Pan-Asian Twist
We are excited to announce the appointment of Chef Roy Park as the new Head Chef of LILYMU. Known for his ability to infuse creative flair into traditional Asian dishes, Chef Roy brings with him a wealth of experience. Drawing inspiration from Korean, Japanese, and Thai cuisines, he is sure to elevate LILYMU's already dynamic offering.
Chef Roy's culinary journey began at Le Cordon Bleu, where he honed his craft before taking on leadership roles in some of Sydney’s most renowned dining establishments, including Kuro Bar & Dining, NEL Restaurant, and Banksii Vermouth Bar. Throughout his career, he has become known for his focus on sustainability and high-quality ingredients, earning a reputation for turning every dish into an unforgettable experience.
Under Chef Roy's leadership, we’re unveiling a reimagined menu that’s filled with bold new flavors and vibrant combinations. Expect exciting dishes like Hokkaido scallops with red nahm jim, ginger, and kaffir lime, as well as Kiwami wagyu rump steak with galbi emulsion and sambal. We’ve also introduced cauliflower with almond miso and gochujang, and green curry mussels with tomatoes and flatbread to truly push the boundaries of Pan-Asian cuisine.

My goal is to continue the LILYMU legacy with fresh, sustainable ingredients, modern dishes, and a commitment to experimenting with fragrances and textures that excite the palate.”
