Introducing Itō: Our New Japanese Izakaya in Surry Hills
A new wave of dining has arrived in Surry Hills with the launch of Itō, our latest venture at ESCA Group. Nestled on Crown Street, this modern Izakaya brings a fresh perspective to the space previously occupied by Cuckoo Callay, offering an elevated take on the traditional Japanese after-work dining experience.
With seating for 85 guests and an additional 25 alfresco seats, Itō provides the perfect setting for a dynamic dining atmosphere where food and drinks spark conversation and connection. Leading the kitchen is Head Chef Erik Ortolani, whose experience at Cho Cho San and Nobu has shaped his unique approach to blending his Italian heritage with his love for Japanese cuisine. The result? A menu that celebrates the best of both worlds. Dishes like yellowfin tuna on bonito bread with shaved bottarga and Wagyu mafaldine paired with white shimeji and miso offer exciting blends of flavors while staying true to Japanese traditions.

Designed by the talented Matt Darwon, the space at Itō combines sleek, modern design with traditional Japanese warmth. Bespoke Tasmanian blackwood furniture, Japan-black stained floorboards, and bold color accents create a venue full of personality—inviting our new guests to relax and immerse themselves in the dining experience.
