about the chef

With roots in the Philippines and a career shaped by travel across Southeast Asia, Head Chef Noel Lao brings curiosity, nostalgia and precision to his cooking. Beginning in hospitality in 2009, Noel spent over a decade refining his craft across disciplines — from six years as a pastry chef to leading the kitchen at Sydney’s hatted Korean omakase restaurant, MATKIM.

Now at LILYMU, he draws on his heritage and travels to create contemporary Pan-Asian dishes that bridge cultures. His approach balances tradition and innovation, expressed through generous, share-style plates that evoke memory, comfort and connection.
